Eight: an all-new concept in dining out
Eight is an innovative new restaurant and coffee shop franchise concept with an underlying Mediterranean theme. Here, we guide you, as a potential franchisee, through the concepts that define Eight Mediterranean and its subsidiary brands.
A restaurant’s concept design is the lifeline of its brand and longevity in the market. It makes the venue stand apart from the competition, and it’s ultimately the restaurant’s unique selling proposition. The overall process of restaurant design, remodelling, planning, etc is often a part of the restaurant concept development and also encompasses other considerations such as market and competition, emerging and fading trends, financial modelling and what-if scenarios, branding and brand evolution, supply chain issues, and potentially even brand portfolio management.
The Eight brand is designed with all these considerations. Generally, the build cost of a new unit would be between $85 – $300 per square foot (depending on the concept), and so to keep the build cost low, Eight’s strategy is to keep capital expenditure budgets to a minimum wherever possible, by taking over other brand stores, such as Frankie & Benny’s, where infrastructure is compatible with Eight. In this way, a cosmetic exercise is all that will be required for the conversion, since the majority of equipment and infrastructure is left intact when stores close down.

Eight is an exciting café style concept new to the market, designed to include an exterior seating area where we can take full advantage of the restaurant’s setting. The overall concept is based on the graceful and ornate textures and patterns of Turkish architecture, freshened up with greenery and natural timbers to reflect the company’s natural and pesticide-free values. The brand colours of yellow, aubergine and turquoise run through the furniture.
The Eight Mediterranean design creates a warm, welcoming Mediterranean atmosphere. Seating consists of a combination of tables and chairs for casual dining, and a selection of sofas and armchair seating with coffee tables, which are perfect for patrons who simply wish to relax in a comfortable environment. The kitchen is open plan to give customers a sense of comfort, and security in the knowledge that their food is being prepared in a clean and hygienic environment.

The concept is to present döner kebab in a contemporary and modern fashion for the UK and international market. In developing this brand, we have created a clean, crisp image which will stand out over other döner kebab brands, offering the customer a true and passionate experience.
The concept can be rolled out across the nation and possibly provide opportunities for the owners to convert / franchise their own unbranded stores.
The objective of the design is to create an innovative experience with edge, incorporating the brand colours. The interior design will provide Eight with the ability to provide a strong brand statement in the market, stand out as a destination restaurant for döner kebabs and offer a new style of fast-food design in the market.
Upon entering Eight Döner the customer is greeted with clean white surfaces and panels on the side wall. A minimal colour palette is used - crimson, white, charcoal and plywood surfaces in keeping with the brand colour.
An open kitchen design allows customers to see their döner kebabs being prepared in front of them. The front counter line allows the customer to select their ingredients for their kebabs and collect their meal at the end of the counter.

Eight Wrap's design will be identical to the Eight Döner concept, with a small change to the colour scheme.
Like the döner concept, upon entering Eight Wrap the customer will again be greeted with clean white surfaces and panels on the side wall. A minimal colour palette is used - turquoise, white, charcoal and plywood surfaces in keeping with the brand colour.
An open kitchen design allows customers to see their wraps being prepared in front of them. The front counter line allows the customer to select their ingredients for their wraps and pick their complete meal up at the end of the counter.
